in this study, consumer demand functions for olive oil, sunflower oil and cotton seed oil are estimated for Turkey using time series data which covers the period 1957-1976. As explanatory variables, own prices, consumer income, price of substitutes and trend variables are employed. The results suggest that the own price elasticities for olive oil and cotton seed oil are less than 1, and for sunflower oil greater than 1. On the otherhand, income elasticities for olive oil and sunflower oil are graeter than 1, but that for cotton seed oil is less than 1. The results also suggest that margarin and olive oil are strong substitutes.
