Sustainable solutions and strategies that promote using waste and by-products for sustainable development are essential to tackling the global food crisis. Although food companies perform chemical and microbial control tests in production steps, food freshness usually cannot be monitored after delivery. Consumers generally interpret food freshness based on the "expiration date" of foods. Food products are discarded by consumers due to safety and quality concerns, even when their expiration dates have not yet passed, thereby increasing global food waste. Therefore, if a low-cost, sustainable smart packaging system that can provide information about food freshness and quality can be produced, food poisoning and global food waste can be minimized. This study aims to develop an indicator ink formulation based on anthocyanin and Zeolitic Imidazole Framework-8 (ZIF-8) for printing colorimetric QR barcodes to monitor food spoilage and ensure traceability. First of all, the characterization and synthesis of ZIF-8 nanocrystals were performed. Besides that, extraction and characterization of anthocyanins from Black nightshade (Solanum nigrum L.) peel were performed. Then, ink formulations were developed for the inkjet printer, and characterization tests were conducted to determine their physicochemical properties. Finally, all results were evaluated, and the best ink formulation was tested with the fish (horse mackerel) samples.
