This study investigated the effect of different PEO (5% w/v)/gelatin (10% w/v) ratios of 5:15, 10:10, and 15:5 (w/w) on the properties of centrifugal spinning solutions and the encapsulation of clove essential oil. The impact of these formulations on microfiber structure and microfiber mat characteristics was examined. The flow behavior, viscoelastic properties, morphology, fiber size, water vapor permeability, and thermal characteristics of the microfibers were analyzed. The relationship between average fiber size and the consistency index was found to be highly significant, with a correlation coefficient of 0.97 (p = 0.001). The average diameters of P5-G15, P5-G15-EO, P10-G10, and P10-G10-EO microfibers were 2.81 +/- 0.58 & micro;m, 2.57 +/- 0.68 & micro;m, 3.10 +/- 0.49 & micro;m, and 3.07 +/- 0.65 & micro;m, respectively. FTIR analysis confirmed strong molecular interactions among microfiber mat components, as indicated by the shifts of key characteristic peak of PEO and gelatin toward higher wavenumbers. The incorporation of clove essential oil significantly enhanced the antioxidant activity and total phenolic content of the microfiber mats. Additionally, the microfiber mats exhibited antimicrobial activity against E. coli and S. aureus, though their effectiveness varied depending on the testing medium. The P5-G15-EO microfiber mat effectively delayed browning and color changes in mushrooms while inhibiting mold growth.
