Şaraplarda malolaktik fermentasyon bozunmaya yol açan bakterilerin çoğalması durumunda istenilmemektedir. 120 adet sus, aynı şaraplardan izole edilen laktik asit bakterileri üzerinde taranmıştır, izolatlardan biri üzerinde (Leuconostoc mesenteriodes subsp. cremoris) bakteriyosin üretim potansiyeli çalışılmıştır. Bu sustan molekül ağırlığı yaklaşık 32,000 Da olarak belirlenmiş bakteriyosin benzeri bir inhibitor elde edilmiştir. Malolaktik fermentasyonu kontrol için, malolaktik fermentasyon yapabilen bir sus üzerinde deneyler yapılmış ve elde edilen inhibitörün, malolaktik fermentasyonu kontrol ettiği gözlenmiştir.
