Chicken or the egg; or who ordered the chiral phase transition?
Kogan, II; Kovner, A; Tekin, Bayram (2001-06-01)
We draw an analogy between the deconfining transition in the (2+1)-dimensional Georgi-Glashow model and the chiral phase transition in (3+1)-dimensional QCD. Based on the detailed analysis of the former we suggest that the chiral symmetry restoration in QCD at high temperature is driven by the thermal ensemble of baryons and antibaryons. The chiral symmetry is restored when roughly half of the volume is occupied by the baryons. Surprisingly enough, even though baryons are rather heavy, a crude estimate for ...
Meat species identification and Halal authentication using PCR analysis of raw and cooked traditional Turkish foods
Ulca, Pelin; Balta, Handan; Cagin, Ilknur; Senyuva, Hamide Z. (Elsevier BV, 2013-07-01)
The method performance characteristics of commercially available PCR kits for animal species identification were established. Comminuted meat products containing different levels of pork were prepared from authentic beef, chicken, and turkey. These meat products were analysed in the raw state and after cooking for 20 mm at 200 degrees C. For both raw and cooked meats, the PCR kit could correctly identify the animal species and could reliably detect the addition of pork at a level below 0.1%. A survey of 42 ...
Food spoilage monitoring using carbon nanodots and uv irradiation reinforced colorimetric fish gelatin films
Kılıç, Münevver Beyza; Kahyaoğlu, Leyla Nesrin; Şümnü, Servet Gülüm; Department of Food Engineering (2022-9)
Foodborne diseases can lead to serious health and economic losses. Therefore, research priority has been given to the efforts to ensure food safety in recent years. Within this framework, effective and user-friendly smart packaging technologies need to be developed and integrated into food packaging applications. The proposed project aims to develop a biocompatible colorimetric film that can be integrated into food packaging where the consumer can easily obtain a real-time freshness assessment of food. Fish...
