Quality of Gluten-Free Bread Formulations Baked in Different Ovens
Demirkesen, Ilkem; Şümnü, Servet Gülüm; Şahin, Serpil (2013-03-01)
The objective of this study was to determine the effects of different tigernut flour/rice flour ratios (0:100, 5:95, 10:90, 15:85, 20:80, and 25:75) on quality of gluten-free bread formulations baked in infrared-microwave combination and conventional ovens. The degrees of the starch gelatinization of breads baked in different ovens were also compared. Conventionally baked breads prepared with tigernut flour/rice flour ratio of 10:90 and the infrared-microwave combination-baked breads prepared with tigernut/...
QUALITY-CONTROL CHARTS FOR STORAGE OF APRICOTS
Şümnü, Servet Gülüm; OZILGEN, M (1994-09-01)
Construction of modified Shewhart charts to monitor quality variations of apricots coated with edible sucrose polyesters in storage are described by using data based on changes in weight, soluble solids, pH, ascorbic acid, and Hunter colour scale. These control charts may be used to maintain the inevitable quality loss within acceptable limits, and make it possible to readjust the storage conditions if the acceptable limits should be violated.
Quality of deployment in surveillance wireless sensor networks
Onur, Ertan; Deliç, Hakan (Springer Science and Business Media LLC, 2005-01-01)
When wireless sensors are used to keep an area under surveillance, a critical issue is the quality of the deployment from the sensing coverage viewpoint. In this paper, we propose several quality measures, which indicate if the deployment provides sufficient coverage, or whether redeployment is required or not. The terrain is modeled as a grid and the placement of the sensors is uniformly distributed. Neyman–Pearson detection is utilized to determine the effects of false-alarm and signal characteristics on ...
Quality of floating car data (FCD) as a surrogate measure for urban arterial speed
Altintasi, Oruc; Tüydeş Yaman, Hediye; Tuncay, Kağan (Canadian Science Publishing, 2019-12-01)
Commercial floating car data (FCD) is being increasingly used as a traffic data source due to its lower cost despite concerns about its reliability. This paper focuses on the evaluation of FCD speed quality as a surrogate measure for arterial speed from different aspects. First, FCD speed is compared to video-based traffic data, collected from a specific urban road segment and assumed as ground truth in (a) descriptive evaluations, (b) speed estimation, and (c) level of service estimation. Regression analys...
