Son yıllarda insan salıına katkı salayan gıda ürünlerinin gelitirilmesi önem kazanmıtır. Tüketici, gıdalarda artık sadece tat ve besin öelerini yeterli bulmayıp, salıa katkıda bulunacak fonksiyonel bileenleri istemeye balamıtır. Ekstrüzyon farklı yapı ve dokuya sahip ürünler üretebilmesi nedeni ile ürün karıımlarına fonksiyonel bileen eklemek için çok uygun bir ilemdir. Ekstrüzyon mekanik ve ısıl ilemin bir arada olduu bir uygulamadır. Isıl veya mekanik ilemeler fonksiyonel bileenlerin yapısını etkileyebilir. Dolayısı ile gıda ilemlerinin fonksiyonel bileenlere etkilerinin incelenmesi gerekmektedir. Bu amaçla bu projede, ekstrüzyonun bazı kanser türlerini önledii bilinen likopenin fazlaca bulunduu domates (Solanum lycopersicum) posası eklenmi ekstrüde ürünler gelitirilmi ve extrüzyonun fonksiyonel bileenler üzerine etkileri aratırılmıtır. Örneklerin ekstrüzyon öncesi ve sonrası likopen içerii ve antioksidan aktiviteleri analiz edilmitir. Ürünler toplam niasta jelatinizasyon derecesi, toplam fenol, lif (toplam, çözünen ve çözünmeyen), pektin, protein, ve kül miktarları açısından da analiz edilmilerdir.
