The literature on food loss and waste is rapidly expanding. Most of the studies in this literature highlight the billion tons of food lost or wasted annually in an attempt to draw attention to the ever-growing issue which jeopardizes not only global food security by threatening the availability, accessibility, and utilization of food but also the sustainability of all food systems by causing economic, social, and environmental distress. This distress makes sustainable transitions an imperative for food systems and calls for Design for Sustainability for action. Since consumer-level food waste accounts for not only the waste of food but also the waste of all resources utilized farm to fork, Design for Sustainable Behavior focuses on consumer behaviors and Practice-Oriented Design for Sustainability on consumer practices to reduce food waste. Regarding these, this thesis aims at exploring and identifying consumer household food practices followed to reduce and even prevent food waste within which multiple problem areas were defined in the study for design intervention.

Sustainable design implications for alternative food networks: A case on Güneşköy's community supported agriculture (CSA) model
Kaplan, Ayşe; Doğan, Çağla; Department of Industrial Design (2021-6)
The global food system consists of complex processes (i.e., food production, distribution, consumption, and disposal) and contains several environmental, economic, and social sustainability challenges. As a result of the food system's problems, some producers and consumers have taken actions that have resulted in the emergence of alternative food networks. These are primarily bottom-up initiatives led by creative and innovative groups of people collaborating to develop alternative food-system solutions. Dif...
How Urban Designers Perform: An International Perspective On Actual Practice
Food spoilage monitoring using carbon nanodots and uv irradiation reinforced colorimetric fish gelatin films
Kılıç, Münevver Beyza; Kahyaoğlu, Leyla Nesrin; Şümnü, Servet Gülüm; Department of Food Engineering (2022-9)
Foodborne diseases can lead to serious health and economic losses. Therefore, research priority has been given to the efforts to ensure food safety in recent years. Within this framework, effective and user-friendly smart packaging technologies need to be developed and integrated into food packaging applications. The proposed project aims to develop a biocompatible colorimetric film that can be integrated into food packaging where the consumer can easily obtain a real-time freshness assessment of food. Fish...
Cost-effective approach to ethanol production and optimization by response surface methodology
Uncu, Oya Nihan; Çekmecelioğlu, Deniz (Elsevier BV, 2011-04-01)
Food wastes disposed from residential and industrial kitchens have gained attention as a substrate in microbial fermentations to reduce product costs. In this study, the potential of simultaneously hydrolyzing and subsequently fermenting the mixed carbohydrate components of kitchen wastes were assessed and the effects of solid load, inoculum volume of baker's yeast, and fermentation time on ethanol production were evaluated by response surface methodology (RSM). The enzymatic hydrolysis process was complete...
Efficiency of various silicon rich amendments on growth and cadmium accumulation in field grown cereals and health risk assessment
Sohail, Muhammad Irfan; Rehman, Muhammad Zia Ur; Rizwan, Muhammad; Yousaf, Balal; Ali, Shafaqat; ul Haq, Muhammad Anwar; Anayat, Alia; Waris, Aisha A. (2020-04-01)
Cadmium (Cd) contamination of arable soils and its subsequent accumulation in food is one of the global issues which needs urgent attention. Field experiments were conducted to explore the impacts of ten silicon (Si) rich amendments on Cd bioavailability and accumulation by maize and wheat irrigated with sewage effluents. Results depicted that applied amendments decreased the total Cd accumulation in shoots and grains of both crops with and the maximum decrease was observed in rice husk biochar (RHB) treatm...
