Rheological behavior of styrene-maleic anhydride/polyol blends obtained through reactive processing
Bayram, G; Yılmazer, Ülkü; Xanthos, M; Patel, SH (2002-09-19)
The condensation reaction of styrene-maleic anhydride copolymer (SMAH) with polytetramethylene ether glycol (PTMEG) in the presence or absence of a hydrated zinc acetate catalyst was studied in a batch mixer. As a control, pure SMAH and an SMAH/catalyst blend were also subjected to the same processing conditions. The reaction characteristics of the blends were investigated by Fourier transform infrared spectroscopy (FTIR) and thermal and rheological analysis. FTIR analysis of the SMAH/PTMEG blend indicated ...
Rheological and Microscopic Properties of Fat Blends with Similar Solid Fat Content but Different Trans Composition
Mert, Behiç; Sahin, Kubra; Tekin, Aziz (2013-01-01)
In this study, two different groups of fat samples were prepared in a way that samples of each group had different trans fatty acid (TFA) composition but similar solid fat content (SFC). Samples of the first group (named group A) had TFA between 0.0 and 56.23 %, while the samples of the second group (group B) contained trans isomers ranging from 0.0 to 44.4 %. A polarized microscope was used to monitor the differences between the samples in terms of crystal size and crystal number during isothermal crystall...
Rheological properties of waxy maize starch and xanthan gum mixtures in the presence of sucrose
Wang, Bao; Wang, Li-Jun; Li, Dong; Özkan, Necati; Li, Shu-Jun; Mao, Zhi-Huai (2009-07-11)
Rheological properties of 5% (w/w) waxy maize starch (WMS)/xanthan gum (XG) mixed pastes (mixing ratios: 10/0, 9.5/0.5, 9/1) in the presence of sucrose (0%, 15%, and 30%) were studied. The 5% WMS paste displayed strong anti-thixotropic behavior based on the heating method adopted (heating in water bath for 40 min with mixing at 200 rpm). The addition of XG could accelerate the formation of new structure of the WMS/XG mixed pastes under shear conditions, and XG could also decrease the in-shear recoveries of ...
Rheological properties of gluten-free bread formulations
Demirkesen, Ilkem; Mert, Behiç; Şümnü, Servet Gülüm; Şahin, Serpil (Elsevier BV, 2010-1)
In this study, the theological properties of rice bread dough containing different gums with or without emulsifiers were determined. In addition, the quality of rice breads (volume, firmness and sensory analysis) was evaluated. Different gums (xanthan gum, guar gum, locust bean gum (LBG), hydroxyl propyl methyl cellulose (HPMC), pectin, xanthan-guar, and xanthan-LBG blend) and emulsifiers (Purawave (TM) and DATEM) were used to find the best formulation for gluten-free breads. Rice dough and wheat dough cont...
Rheological study and fractal analysis of flaxseed gum gels
Wang, Yong; Li, Dong; Wang, Li-jun; Wu, Min; Özkan, Necati (2011-08-15)
The rheological properties and fractal dimensions of flaxseed gum gels were analyzed in various ionic strength values ranging between 0 and 1000 mM. The rheological properties of flaxseed gum were significantly influenced by the ionic strength. The gel strength first increased then decreased with the increasing of ionic strength and the strongest gel was obtained when the ionic strength was 400 mM. The calculated fractal dimensions of the flaxseed gum gels were 2.06-2.49 or 1.42-2.18, based on the model sel...
