Rheological and Microscopic Properties of Fat Blends with Similar Solid Fat Content but Different Trans Composition
Mert, Behiç; Sahin, Kubra; Tekin, Aziz (2013-01-01)
In this study, two different groups of fat samples were prepared in a way that samples of each group had different trans fatty acid (TFA) composition but similar solid fat content (SFC). Samples of the first group (named group A) had TFA between 0.0 and 56.23 %, while the samples of the second group (group B) contained trans isomers ranging from 0.0 to 44.4 %. A polarized microscope was used to monitor the differences between the samples in terms of crystal size and crystal number during isothermal crystall...
Rheological study and fractal analysis of flaxseed gum gels
Wang, Yong; Li, Dong; Wang, Li-jun; Wu, Min; Özkan, Necati (2011-08-15)
The rheological properties and fractal dimensions of flaxseed gum gels were analyzed in various ionic strength values ranging between 0 and 1000 mM. The rheological properties of flaxseed gum were significantly influenced by the ionic strength. The gel strength first increased then decreased with the increasing of ionic strength and the strongest gel was obtained when the ionic strength was 400 mM. The calculated fractal dimensions of the flaxseed gum gels were 2.06-2.49 or 1.42-2.18, based on the model sel...

Rheological and thermal analysis of bentonites for water base drilling fluids
Kök, Mustafa Verşan (Informa UK Limited, 2004-02-01)
The objective of this research is to investigate the rheological and thermal properties of bentonites for water base drilling fluids. Rheological experiments were performed with 4 different bentonite samples and clay percentages, cation-exchange capacity (CEC), swelling volume, pH, and physical and rheological properties of the samples are determined. The thermal behaviors of bentonite samples were investigated using simultaneous thermogravimetry (TG/DTG) and differential thermal analysis (DTA) techniques. ...
Rheological properties of gluten-free bread formulations
Demirkesen, Ilkem; Mert, Behiç; Şümnü, Servet Gülüm; Şahin, Serpil (Elsevier BV, 2010-1)
In this study, the theological properties of rice bread dough containing different gums with or without emulsifiers were determined. In addition, the quality of rice breads (volume, firmness and sensory analysis) was evaluated. Different gums (xanthan gum, guar gum, locust bean gum (LBG), hydroxyl propyl methyl cellulose (HPMC), pectin, xanthan-guar, and xanthan-LBG blend) and emulsifiers (Purawave (TM) and DATEM) were used to find the best formulation for gluten-free breads. Rice dough and wheat dough cont...
