Preservation and shelf-life extension of shrimps and clams by high hydrostatic pressure
BUYUKCAN, Mehmet; BOZOGLU, Faruk; Alpas, Hami (Wiley, 2009-08-01)
P>Clam (Venus gallina) and shrimp (Parapenaeus longirostris) samples were high hydrostatic pressure (HHP) treated at 200, 220 and 250 MPa at 25, 30, 40 and 50 degrees C for 10 and 20 min. Based on the results of microbial reduction, the best combinations of HHP treatments were determined as 250 MPa, 50 degrees C, 10 min for shrimps and 220 MPa, 50 degrees C, 10 min for clams. HHP-treated samples stored at 25 degrees C (room tempertur) and 4 degrees C (refrigeration temperature) were analysed. According to t...
Preservation and shelf life extension of shrimps and mussels by high hydrostatic pressure(HPP)
Büyükcan, Mehmet; Alpas, Hami; Department of Food Engineering (2006)
Shrimp and mussel samples were cleaned, washed and exposed to steam before freezing. HHP treatment was performed at combinations of 200, 220 and 250 MPa at 25, 30, 40 and 50°C for 10 and 20 minutes. Microbial analysis were performed by analyzing the effect of treatments on the microbial reduction in the samples. Based on the results of the microbial reduction, the best combinations of HHP treatments were determined as 250 MPa, 50°C, 10 minute for shrimps and 220 MPa, 50°C, 10 minute for mussels where total ...
Preservation and shelf life extension of anchovy (Engraulis encrasicolus) and haddock (Gadus merlangus euxinus) by high hydrostatic pressure
Akhan, Ceyda; Alpas, Hami; Department of Food Engineering (2012)
High Hydrostatic Pressure (HHP) application, alone or in combination with refrigeration, ambient or moderate heating temperatures; inactivates pathogenic and spoilage microorganisms and conserves the product „„freshness‟‟ with fewer changes when compared to conventional food preservation processes. During handling and frozen storage, quality deterioration of seafood brings the risk of contamination, quality loss and a potential threat to food safety and human health. In this respect, the aim of this study w...
BIODIVERSITY OF YEASTS OF LOCAL WINEGRAPES IN TÜRKİYE AND GENOTYPING OF SACCHAROMYCES CEREVISIAE
Seyedmonir, Elnaz; Gültekin, Güzin Candan; Çetinkaya , Asya; Department of Biochemistry (2023-2-27)
Grape must and wine harbors a wide diversity of yeast species responsible for spontaneous alcoholic fermentation and wine aroma. Therefore, the impact of indigenous species and terroir effect on aromatic properties of traditional Turkish wine made from Kalecik Karası, Boğazkere, Öküzgözü, and Dimrit grape varieties collected from three different regions (Ankara, Elazığ and Cappadocia) were investigated, using gas chromatography-mass spectrometry (GC-MS). A total of 56 compounds were identified and quantifie...
