A general dynamic mathematical model was developed to predict the effect of can arrangement geometry on temperature distribution within cans in still retorts. For this purpose, the temperature variation in the cans was recorded for various can arrangements. Also, the influence of the physical properties of the material and the mechanism of heat transfer for heat penetration were studied. Experiments were carried out with water, peas in brine and tomato paste in no. 3 cans in an experimental vertical still retort. The equations employed for modelling were elliptic partial differential equations. They were solved numerically on a microcomputer using the finite element method.

Kinetic Model of Lipid Oxidation in Foods
Özilgen, Sibel; Özilgen, Mustafa (Wiley, 1990-3)
A general mathematical model in the same form with the logistic equation simulated lipid oxidation in food systems. Almost perfect agreement was found between the model and seventeen sets of data from the literature, obtained with egg yolk, restructured beef and pork nuggets, cooked pork meat, iced gutted dogfish, frozen mackerel fillets and ground raw poultry meat. A simple method was described for the evaluation of the numerical values of the model parameters. Variations of these numerical values were als...
Effect of polydextrose-substitution on the cell structure of the high-ratio cake system
Hicsasmaz, Z; Yazgan, Y; Bozoglu, F; Katnas, Z (Elsevier BV, 2003-01-01)
Effect of polydextrose-substitution on the cell structure of the high-ratio cake system was investigated in terms of the bubble size distribution and foam drainage time of the cake batter, and the cake height, true and bulk densities, porosity, cell size and shape distributions of the cake crumb. Sugar-replacement levels were 0%, 25%, 50%, 75%, and 100% of the sugar content of the conventional high-ratio cake formulation.
KINETIC COMPENSATION DURING HOMOGENEOUS AND HETEROGENEOUS NUCLEATION OF ICE IN AQUEOUS SYSTEMS
OZILGEN, S; OZILGEN, M; REID, DS (Elsevier BV, 1994-01-01)
Homogeneous and heterogeneous nucleation rates of ice in aqueous systems are described in the literature with the equation J = A exp (B tau). There are a very large number of published data available for variation of the constants A and B with experimental conditions. Results of this study show that the parameters obtained in the experiments with differential scanning calorimeter and the microscopic technique may be described separately with an empirical compensation equation of the form In A = aB + b. The ...
Effects of Bentonite Combinations and Gelatin on the Rheological Behaviour of Bentonite – Apple Juice Dispersions
Dik, Tunay; Özilgen, Mustafa (Elsevier BV, 1996-11)
Rheological behaviour of bentonite – apple juice suspensions were experimentally determined at 25°C, within the shear rate range of 4.3 to 43.1 s−1with 0.90, 1.33 and 2.66 g/L bentonite mixtures and 0 to 0.25 g/L (on dry basis) gelatin concentrations. The mixtures consisted of 100%, 80%, 60%, 40% 20% and 0% Ca-bentonite and balance Na-bentonite combinations. The experimental data were described with the power law as τ =Kγ.1.56. The consistency index was related to the calcium, sodium and gelatin concentrati...
Investigation of dielectric properties of different cake formulations during microwave and infrared-microwave combination baking
Sakiyan, Ozge; Şümnü, Servet Gülüm; Sahin, Serpil; Meda, Venkatesh (Wiley, 2007-05-01)
Dielectric properties can be used to understand the behavior of food materials during microwave processing. Dielectric properties influence the level of interaction between food and high frequency electromagnetic energy. Dielectric properties are, therefore, important in the design of foods intended for microwave preparation. In this study, it was aimed to determine the variation of dielectric properties of different cake formulations during baking in microwave and infrared-microwave combination oven. In ad...
