© 2021 Elsevier LtdIn recent years, there is a growing trend from both academia and the industry towards the use of “clean-labeled” ingredients obtained from renewable resources. Proteins and polysaccharides, in particular, are becoming increasingly popular as alternatives to already well-established synthetic surfactants. Quince seeds are a relatively novel hydrocolloid source that has recently raised interest among researchers due to their strong surface activity and viscosity-enhancing properties. This study investigates quince seed extract's surface properties (dynamic surface tension and dilatational surface rheology) and how they differ with varying concentrations (between 0.01% and 1%), pH's (3, 7, 9, and 11), and ionic strengths (0.1, 0.3, 0.5 M NaCl). By QSE addition alone, equilibrium surface tension could be lowered to ∼36 mN/m, which is lower than the lowest ST that can be achieved with many other surface active biopolymers. Critical aggregation concentration (CAC) was identified as 0.165% w/v, meaning a relatively low extract concentration was sufficient to provide complete surface coverage. Dynamic surface tension curves revealed almost instantaneous polymer adsorption for concentrations over 0.01% w/v, which demonstrates the strong potential of the gum as a foaming agent. As solution pHs get further from the isoelectric point of QSE proteins, the rate of adsorption of QSE molecules onto the interface and the equilibrium surface pressures increased. Surface properties were also significantly affected by the ionic strength of the medium, with eq. STs decreasing with increasing QSE concentration. pH and ionic strength induced conformational changes in the interfacial layer and also led to local minima and maxima in dilatational elastic and loss modulus within ranges studied. Considering these findings, QSE is a very promising natural alternative to other polymeric surfactants and stabilizers currently used in the food, cosmetic and pharmaceutical industries.

Investigation of the properties of portland slag cement produced by separate grinding and intergrinding methods
Geven, Çağlar; Hoşten, Çetin; Department of Cement Engineering (2009)
In recent years, there has been a growing trend for the use of industrial by-products in the production of blended cements because of economical, environmental, ecological and diversified product quality reasons. Granulated blast furnace slag, a by-product of the transformation of iron ore into pig-iron in a blast furnace, is one of these materials which is used as a cementitious ingredient. The aim of this study is to investigate the properties of Portland slag cement (CEMII/B-S) by using separate grinding...
Investigation of processing parameters on production of hemicellulose based films from different agricultural residues via extrusion
Akınalan, Büşra; Bölükbaşı, Ufuk; Özkan, Necati; Department of Chemical Engineering (2014)
Today, due to the environmental concerns about petroleum based polymers, the use of renewable polymers including polysaccharides in food packaging applications is increasing rapidly. In the present study, hemicellulose was extracted from corn cobs, wheat straw and sunflower stalks, and two different techniques, solvent casting and extrusion, were utilized for biodegradable film production. Films produced from different types of biomasses were compared in terms of their mechanical, thermal and morphological ...
Investigation of surface properties of quince seed extract and assessment of its performance as a novel polymeric surfactant
Kırtıl, Emrah; Öztop, Halil Mecit; Department of Food Engineering (2020-12-30)
The use of sustainable ingredients from natural sources has shown an increase in recent years. For stabilization of dispersions, proteins and polysaccharides are increasingly being used in combination for their synergistic properties. Various studies have focused on developing biopolymers that merge the functions of proteins and polysaccharides in a single molecule. Quince seed extract (QSE) is a natural biopolymer that display this exceptional attribute in its native state. However, the literature is still...
INVESTIGATION OF PHOTOFERMENTATIVE POLY-HYDROXYBUTYRATE (PHB) AND HYDROGEN PRODUCTION VIA RHODOBACTER CAPSULATUS
Hoşafcı, Ertan; Bayramoğlu, Tuba Hande; Koku, Harun; Department of Environmental Engineering (2023-1-26)
The aim of this thesis study is to investigate factors affecting hydrogen (H2) and poly-hydroxybutyrate (PHB) production via photofermentation using two strains of Rhodobacter capsulatus species. To this purpose, three experimental designs were set up, namely Set 1, Set 2 and Set 3. In Set 1, various approaches in pretreatment of bacterial biomass were investigated. For R. capsulatus Wild Type (WT) strain, employment of different pretreatment methods did not make a significant difference, where an average ...
Investigation of fly ash characteristics on zeolite 4A synthesis
Akın, Süleyman Şener; Kazanç Özerinç, Feyza; Department of Micro and Nanotechnology (2019)
There is lack of information about the relation between the candidate raw material fly ash and end product, Zeolite 4A.This study aims to fill the gap in the literature through controlled ash production experiments, characterization studies and Zeolite 4A synthesis. As a result of studies, the nucleation behaviour of the alkali fusion product obtained from fly ash was demonstrated and the most crystalline Zeolite 4A with cubic morphology were obtained from Seyitömer fly ash with alkali fusion product of Si/...
