Effect of high hydrostatic pressure (hhp) on the quality parameters and shelf life of acidified protein drink
Tırpancı, İrem Bige; Alpas, Hami; Department of Food Engineering (2022-2-11)
Acidified milk drinks (AMD) has recently gained popularity due to their nutritional aspects. Most of these drinks suffer from sediment formation and wheying off during shelf life and in order to prevent it, hydrocolloids such as pectin is used as stabilizers. It is important to have a stable beverage without sacrificing milk protein content. Moreover, having an alternative pasteurization method such as High Hydrostatic Pressure (HHP) rather than a thermal treatment could also be a better choice to protect n...
Effect of high hydrostatic pressure (hhp) on some quality parameters and shelf-life of fruit and vegetable juices
Dede, Saner; Alpas, Hami; Department of Food Engineering (2005)
The quality and shelf-life of pressure processed (150, 200 and 250 MPa at 25 and 35°C for 5, 10 and 15 minutes) orange, tomato and carrot juices were compared to fresh and thermally pasteurised (60°C for 5, 10 and 15 minutes and 80°C for 1 minute) juices. Treatments were capable of microbial inhibition of juices to non-detectable levels. The change in ascorbic acid content of HHP treated juices was not statistically significant (p>0.05). Both heat treatments at 60 and 80°C, displayed a significant loss and ...
Effect of ultrasound and high hydrostatic pressure (hhp) on liquefaction and quality parameters of selected honey varieties.
Basmacı, İpek; Alpas, Hami; Department of Food Engineering (2010)
Heat treatment (around 50°C) is a major step in honey filling and packaging that is applied before filtration to decrease viscosity, reduce the moisture level, to destroy yeasts, liquefy crystals and delay crystallization. As a result, formation of Hydroxy Methyl Furfural (HMF), decrease in enzymatic activity, color deterioration, decrease in viscosity and many other structural changes are observed. HMF is produced as a result of Maillard reaction and/or hexose dehydration -which is undesirable-, practicall...
Effect of exhaustion hood flow rate in flow injection cold vapor and hydride generation atomic absorption spectrometry
Cankur, O; Ataman, Osman Yavuz (2004-01-01)
The effect of exhaustion hood flow rate in the laboratory was investigated. It has been observed that this parameter significantly affects the analytical signal. This effect was more evident in cold vapor (CV) atomic absorption spectrometry (AAS) signal when unheated quartz T-tube atomizer (QTA) was used as atom cell. At maximum exhaustion hood flow rate, the peak height and peak area values for Cd decreased to 36% and 35%, respectively, of those obtained under no exhaustion. When CV cell with both ends cov...
Effect of water addition and stoichiometry variations on temperature profiles in an autothermal methane reforming reactor with Ni catalyst
Simeone, M.; Salemme, L.; Scognamiglio, D.; Allouis, Christophe Gerard; Volpicelli, G. (2008-02-01)
Catalytic autothermal reforming of methane was studied over a commercial nickel catalyst as a function of feed flow rate, feed composition and oven temperature. Temperature profile of the catalyst bed was measured by IR thermography and product composition was measured with a continuous gas analyzer.
