The functional properties of extruded products can be enhanced by addition of herbal ingredients. In this study, artichoke leaf powder (ALP) was added to extrudates, at 3%, 6% and 9% concentrations, to increase amount of bioactive nutrients. Aim of the study was to investigate the effect of extrusion on functional components and in vitro bioaccessibility of selected phenolic compounds. Extrusion feed flow rate was 55 ± 1 g/min, screw speed was 250 rpm and barrel temperature zones were set at 80°C, 90°C, 130°C and 150°C (die: 128°C). Total phenolic content and antioxidant activities were measured. LC-MS/MS was used for quantification of selected phenolic compounds. Total phenolic content of extrudates and raw mixtures increased with increasing ALP concentration. Extrusion process caused a significant decrease in total phenolic content for all ALP concentrations. Similarly, antioxidant activities of samples increased with increasing ALP concentration. Antioxidant activities of 3% and 6% ALP added samples did not change after extrusion. Antioxidant activity of 9% ALP added samples decreased after extrusion process. Extrusion process adversely affected cynarin and cynaroside contents of samples. However, in vitro bioaccessibilities of cynarin and cynaroside compounds increased after extrusion process.

Effect of microfluidized onion skin addition on the quality of extrudates
Bilgin, Elçin; Şensoy, İlkay; Mert, Behiç; Department of Food Engineering (2016)
The objective of the study was to investigate the effect of microfluidized onion skin addition on the features of expansion characteristics, water absorption index, water solubility index, color, texture and sensory of extruded products. In addition, addition of microfluidized and non – microfluidized onion skins to extruded products were compared. Increasing microfluidized onion skin content in the samples caused a reduction in sectional expansion index (SEI), volumetric expansion index (VEI) and porosity ...
Effect of extrusion on the functional properties of carrot pulp added extrudates and in-vitro bioaccessibility of lutein and beta-carotene
Ortak, Melda; Şensoy, İlkay; Ögel, Zümrüt Begüm; Department of Food Engineering (2014)
In this study, effects of extrusion on the functional properties of carrot pulp added extrudates was investigated. Extrusion was performed at four different conditions. Two different temperature profile and two different screw speeds were investigated. Change in antioxidant activity, phenolic content, β-carotene and lutein content and their in-vitro bioaccessibilities after extrusion were investigated. Antioxidant activity and total phenolic content was determined by DPPH and Folin–Ciocalteu method, respect...
Effects of processing on onion skin powder added extrudates
Tonyali, Bade; Şensoy, İlkay; KARAKAYA, SİBEL (Springer Science and Business Media LLC, 2020-09-01)
It is possible to enhance the functional properties of extruded products with the inclusion of fruit and vegetable by-products. Onion skin, a rich source of quercetin and fiber, is considered as waste in the industry and can be used as an alternative ingredient to improve the nutritional value of the extruded products. Three levels (3, 6, and 9%) of onion skin powder (OSP) were added to wheat flour and compared with control (0% OSP). The effect of the extrusion process on accessible quercetin, total phenoli...
Monitoring the effects of divalent ions (Mn+2 and Ca+2) in heat-set whey protein gels
Öztop, Halil Mecit; MCCARTHY, Michael J.; ROSENBERG, Moshe (Elsevier BV, 2014-04-01)
Exploring the effects of cations in whey protein-based gels (WPG) is of importance when these gels are used for controlled release applications in food systems. The objective of this study was to evaluate both water uptake and cation release from heat-set WPGs. Magnetic Resonance Imaging and NMR relaxometry were employed to study the uptake and release. A non-paramagnetic (Ca+2) and a paramagnetic cation (Mn+2) were incorporated into the WPG as model divalent cations. Cylindrical pieces of WPGs with mangane...
Effects of buckwheat flour, gums and proteins on rheological properties of gluten-free batters and structure of cakes
Yıldız, Eda; Şümnü, Servet Gülüm; Şahin, Serpil (Codon Publications, 2018-01-01)
The main objective of the study is to determine the effects of buckwheat flour concentration and different gum types (xanthan, guar gum) or proteins (soy protein and whey protein) on rheological properties of gluten-free cake batters and physical properties of cakes (weight loss, porosity, specific volume, hardness and macro structure). Gum containing batters exhibited higher apparent viscosities. More uniform distribution of gas cells were observed in whey protein containing samples compared to other batte...
