Sour cherry pomace derived from mashed cherries that maintains the color and beneficial properties of the cherries (Prunus cerasus L.). In this study, microwave-assisted extraction (MAE) (900 W for 30, 60 and 90 s.), high hydrostatic pressure (HHP) (400 and 500 MPa for 1, 5 and 10 min at 20 degrees C) and ultrasonic-assisted extraction (UAE) (for 5,10 and 15 min with a power of 100%) was used as novel processes. Total phenolic content (TPC), morphological changes, antioxidant activity (AA) and structural changes of cherry pomace were measured by the Folin-Ciocalteu assay, high performance liquid chromatography (HPLC), DPPH-scavenging activity, scanning electron microscopy (SEM) and Fourier transform infrared spectrometry (FTIR). According to the results, all novel technologies (MAE-HHP-UAE) increase PC and AA with respect to conventional solvent extraction method (50 degrees C and 30 min) (CSE). Among novel technologies, MAE (90 s) had highest TPC (275.31 +/- 4.26 GAE/100 g FW) and also had highest antioxidant activity (89.9 +/- 0.22%). The lowest TPC and AA values were 108.36 +/- 3.99 mg gallic acid equivalent (GAE)/100 g fresh weight (FW) and 71.30 +/- 1.21% in CSE, respectively. According to FTIR results, there are no significant structural changes in samples when different extraction techniques were applied. Individual phenolics were quantified by using HPLC for different extraction techniques. Graphic

Effects of natural copigment sources in combination with sweeteners on the stability of anthocyanins in sour cherry nectars
Ertan, Kübra; ÖZKAN, MEHMET (2019-10-01)
Effects of various co-pigment sources [gallic acid (GA), rose leaf extract (RLE), cherry stem extract (CSE), pomegranate rind extract (PRE) and green tea extract (GTE)] on anthocyanin content, colour, and turbidity in sour cherry nectar (SCN), sweetened with sucrose (SCNS), maltose syrup (SCNM) or honey (SCNH), were investigated during storage at 20 degrees C. Co-pigment sources were associated with increases in lambda(max) (up to 4.1 nm), colour density (up to 22%), and polymeric colour (up to 1.7 times). ...
Examination of interfacial properties of quince seed extract on a sunflower oil-water interface
Kirtil, Emrah; Kurtkaya, Enis; Svitova, Tatyana; Radke, Clayton J.; Öztop, Halil Mecit; Şahin, Serpil (2021-12-14)
Seeds of the plant quince are a natural hydrocolloid source whose extract has shown promising results in stabilizing emulsions. The study aims to discover how quince seed extract's interfacial properties (dynamic surface tension and dilatational surface rheology) on an oil–water interface change with varying concentrations (between 0.01% and 1%), pH's (3, 7, and 11), and ionic strengths (0.1, 0.3, 0.5 M NaCl). The lowest concentration that yielded a statistically significant drop in interfacial was found as...
EFFECTS OF SUCROSE POLYESTER COATING ON FRUIT-QUALITY OF APRICOTS (PRUNUS-ARMENAICA (L))
Şümnü, Servet Gülüm (Wiley, 1995-04-01)
Mature apricots were coated with different concentrations of a mixture containing sucrose polyesters (Semperfresh(TM) fruit coating) to determine the effect of that coating on shelf-life, post-storage life and quality of apricots. Respiration rates, weight loss, colour change, variations in soluble solids, ascorbic acid content, titratable acidity and pH of apricots were effectively reduced by both the 10 g litre(-1) and 15 g litre(-1) concentrations during ambient storage. After 10 days of cold storage bot...
Investigation of Physical Properties and Moisture Sorption Behaviour of Different MArshmallow Formulations
Kırtıl, Emrah; Öztop, Halil Mecit (2016-08-25)
Marshmallows are a type of confectionary product known for its soft, foamy texture. It owes this characteristic to its relatively high moisture content (17-21% by wt) and porous structure. However, these attributes make marshmallows more susceptible to quality degrading changes such as; sugar crystallization, texture aging, foam collapse and hardening or softening. The high interfacial area, increases the rates of mass transfer which makes it harder for marshmallows to preserve its initial moisture content ...
Changes in total protein profiles of barley cultivars in response to toxic boron concentration
Mahboobi, H; Yucel, M; Öktem, Hüseyin Avni (2000-01-01)
In this study, ten-day-old seedlings of barley {Hordeum vulgare L. cultivar Anadolu [boron (B)-tolerant] and Hamidiye (B-sensitive)} were used. Boron-treated plants were grown on H3BO3 solution (final concentration of 10 mM) for five days. Control plants received no B treatment during this period. Total protein patterns were obtained by analysis of total protein extract from root and leaf tissues of control and B-treated plants using two-dimensional gel electrophoresis followed by silver staining. The prote...
