Wheatgrass juice (Triticum aestivum L) is known as a healthy drink due to its high antioxidant activity and phenolic content. In order to avoid the undesirable odor and protect the functional compounds, wheatgrass juice was encapsulated using maltodextrin and whey protein. Antioxidant and phenolic content, mean particle size and distribution, morphology, simulated digestion and thermal stability experiments were conducted on the encapsulated powders. Results showed that antioxidant activity was in between 0.30 and 0.06 mg 2-diphenyl-1-picrylhydrazyl (DPPH)/g powder and phenolic content was 3.52-2.28 mg gallic acid equivalent (GAE)/g powder. Encapsulated powders showed good stability in gastric juice and had 62% higher phenolic content compared to the intestinal fluid within 10 min digestion. Phenolic content of powders was also protected against thermal treatment at 40 degrees C, 55 degrees C and 70 degrees C. Kinetic parameters for degradation of the phenolics were well estimated (R-2 >= 0.85) using fractional conversion model.

Fruit juice industry waste utilization includes several options that one of them extraction of bioactive compounds exhibiting antioxidant effect. In this study, ultrasound assisted extraction was applied to dried apple, sour cherry and grape pomaces by using ethanol, 50% aqueous ethanol and water solvents. For antioxidant capacity estimation of the extracts, DPPH•, ABTS•+, CUPRAC and FRAP assays were applied. The highest total phenolic contents were obtained for sour cherry and grape pomace 50% aqueous eth...
Physical and chemical characteristics of encapsulated goldenberry (Physalis peruviana L.) juice powder
DAG, Damla; KILERCIOGLU, Mete; Öztop, Halil Mecit (2017-09-15)
Goldenberry (Physalis peruviana L.) is an exotic fruit that is valued due to its high antioxidant activity and phenolic content. In order to preserve the bioactive contents, microencapsulation is a proper method to extend its shelf life. The aim of this study was to encapsulate goldenberry juice using maltodextrin mixed with gum arabic, alginate and pectin to enhance its stability at simulated digestion fluids. Different maltodextrin/gum arabic, alginate, pectin ratios (10:0, 9:1, 8:2) and core to coating r...
Polyphenol content in selected Turkish wines, an alternative method of detection of phenolics
Kiralp, S; Toppare, Levent Kamil (Elsevier BV, 2006-01-01)
Wine is an important source of dietary antioxidants, due to its content of phenolic compounds. Amount of phenolics in red wines of Turkey were investigated by using electrodes prepared via immobilisation of tyrosinase. Immobilisation was performed by entrapment during electrochemical synthesis of conducting copolymers. Results were compared with Folin-Ciocalteau method. It was found that use of enzyme electrodes is an alternative and cheap method in determining the phenolics in wines. Storage temperature be...
Antioxidant and antimicrobial activities of dietary plants against group A B-Haemolytic streptococci
Gerdan, Ömer Faruk; Çoruh, Nursen; Department of Biochemistry (2009)
Fresh produces, fruit juices and herbal teas used in our regular diet may have importance in the protective treatment of some infectious diseases. In this study, dietary produces were investigated for their antioxidant activities and antimicrobial activities against group A ß-haemolytic streptoccoci. Streptococcus pyogenes, a member of the group A ß-haemolytic streptococci, is a very dangerous pathogen, which may cause diseases such as tonsillopharyngitis, meningitis, rheumatic arthritis. Fruits and vegetab...
Resveratrol as a Growth Substrate for Bacteria from the Rhizosphere
Kurt, Zöhre; Spain, Jim C. (2018-05-01)
Resveratrol is among the best-known secondary plant metabolites because of its antioxidant, anti-inflammatory, and anticancer properties. It also is an important allelopathic chemical widely credited with the protection of plants from pathogens. The ecological role of resveratrol in natural habitats is difficult to establish rigorously, because it does not seem to accumulate outside plant tissue. It is likely that bacterial degradation plays a key role in determining the persistence, and thus the ecological...
