Food Safety Management systems such as HACCP can help to prevent deliberate contamination of food. These systems are widely used already by the food industry to prevent accidental contamination. This makes them an attractive and cost effective way to address the issue of deliberate contamination.

Use of Fourier transform infrared spectroscopy for rapid comparative analysis of Bacillus and Micrococcus isolates
Garip, Sebnem; Gözen, Ayşe Gül; Severcan, FERİDE (Elsevier BV, 2009-04-15)
The identification of foodborne microorganisms and their endospores in food products are important for food safety. The present work compares Bacillus (Bacillas licheniformis, Bacillus circulans and Bacillus silbtilis) and Micrococcus (Micrococcus luteus) species with Fourier transform infrared (FTIR) spectroscopy. Our results show that there are several characteristic peaks belonging to both the Micrococcus and Bacillus Species Which Call be used for the identification of these foodborne bacteria and their...
The effects of crosslinking agents on faba bean flour–chitosan-curcumin films and their characterization
Yıldız, Eda; İlhan, Esmanur; Kahyaoğlu, Leyla Nesrin; Şümnü, Servet Gülüm; Öztop, Halil Mecit (2022-03-01)
Although glutaraldehyde (GLU) has been frequently preferred to improve some characteristics of bio-degradable food packages, it is regarded as a hazardous chemical. Therefore, in this study, the possibility of replacement GLU with citric acid (CA) a non-toxic compound was questioned in a film formation. Different ratios of GLU and CA on faba bean flour, chitosan, and curcumin film were examined. To determine the most favorable film composition, water solubility (WS), swelling degree (SD), water contact angl...
An explorative study regarding the individual response to terrorism risk perception on food chain security - a social-cognitive perspective in case of Romania and Turkey
Stanescu, D. F.; Stanciugelu, I; Alpas, Hami; Bozoğlu, Tahsin Faruk (2016-06-12)
In 2002, World Health Organization published "Terrorist Threats to Food", which was intended primarily for policy-makers in national governments with responsibilities for ensuring food safety, and was designed to assist them in incorporating considerations of food terrorism into existing food safety systems. In this context, food terrorism was defined as 'an act or threat of deliberate contamination of food for human consumption with biological, chemical and physical agents or radio-nuclear (CBRNE) material...
Pathogen detection by core-shell type aptamer-magnetic preconcentration coupled to real-time PCR
Ozalp, V. Cengiz; BAYRAMOĞLU, GÜLAY; Kavruk, Murat; Keskin, Batuhan B.; Öktem, Hüseyin Avni; ARICA, MEHMET YAKUP (Elsevier BV, 2014-02-15)
The presence of pathogenic bacteria is a major health risk factor in food samples and the commercial food supply chain is susceptible to bacterial contamination. Thus, rapid and sensitive identification methods are in demand for the food industry. Quantitative polymerase chain reaction (PCR) is one of the reliable specific methods with reasonably fast assay times. However, many constituents in food samples interfere with PCR, resulting in false results and thus hindering the usability of the method. Therefo...
Continuous flow microwave processing of peanut butter: A (hypothetical) computational process design study with experimental validation
Coskun, Eda; Ozturk, Samet; Topcam, Huseyin; Karatas, Ozan; Li, Rui; Wang, Shaojin; Mert, Behiç; ERDOĞDU, FERRUH (2022-12-01)
© 2022 Elsevier LtdThe increase in foodborne pathogen cases in low moisture foods has raised a significant food safety concern for food industry. One of the most significant outbreaks related with these food products was observed in 2008–2009 due to Salmonella problem in peanut butter. This issue was recently observed again for a multinational case. Challenges of conventional thermal processing due to the lower thermal conductivity – diffusivity value and higher viscosity, microwave (MW) heating might be an...
