Industrial use of High Hydrostatic Pressure in Food Industry Realities for Food Safety

2016-10-26
High hydrostatic pressure (HHP) also called as ultra high pressure (UHP), high pressure processing (HPP), high pressure pasteurization (HPP) has been studied over 30 years under different names. Recently, it has been branded-patented as “pascalization” and is a “new”, “different”, “non-thermal” food processing method. Its main difference from conventional thermal processing is the addition of the third variable pressure to heat/time combination that already exists making it a 3-D process. More importantly the process is capable of producing industrial food products in a very short time making the process among the fastest food technology in terms of moving from the laboratory research to the market shelves. The process is fast, safe, effective and global producing food-edible products without any additives or preservatives ranging from meat-dairyseafood- deli to fruit/vegetable juices and even pet food. The global HHP market currently reached to 10 billon USD with over 350 commercial equipment worldwide having a value of 0.3 billion USD. Unfortunately, the products are not evenly distributed over the world map and the facts and myths about this new technology will be discussed.

Empirical correlations for estimating filtrate volume of water based drilling fluids
Ozbayoglu, Evren; Gunes, Cagri; Apak, Esat C.; Kök, Mustafa Verşan; Iscan, A. Gurkan (Informa UK Limited, 2005-03-01)
Standard American Petroleum Institute (API) filter press is generally used for identifying the filtrate volume of drilling fluids and works only at very low pressures. In fact, during a drilling operation, at downhole conditions, the pressures encountered are significantly higher than what is used during standard API filter press tests. A relationship between the well-known fluid properties and the filtrate volume test is developed. In this study, experiments have been conducted for different water-clay mix...
Mathematical expression of the temperature profile and experimental determination of compression heating of ethylene glycol during high hydrostatic pressure processing
Buzrul, S.; Alpas, Hami; Largeteau, A.; Demazeau, G. (Informa UK Limited, 2007-03-01)
In this study, we aimed to describe the temperature profile in the pressure vessel and the compression heating during high hydrostatic pressure (HHP) processing. Regression coefficients (R-2), root mean square error (RMSE) values and residual plots suggested that fourth-order polynomial function produced reasonable fits to define the temperature profile for all the pressures studied (300-600 MPa). If all the coefficients of this empirical model are determined, initial and final temperatures, a value close t...
PEO - A new hydrate inhibitor polymer
Karaaslan, U; Parlaktuna, Mahmut (2002-11-01)
The hydrate inhibition potential of four different polymers has been tested in a high-pressure apparatus at high pressures and low temperatures. Aqueous polymer solutions were prepared at 1 wt % concentration. Methane (99.5% purity) was used as hydrate former gas. Hydrate formation rates of the tests were calculated to decide the best inhibitors. A known hydrate inhibitor, poly(N-vinylpyrrolidone) (PVP) and a water-soluble thermoplastic polymer TEO) were determined the best kinetic inhibitors among them.
Simulation of laminar microchannel flows with realistic 3D surface roughness
Akbaş, Batuhan; Sert, Cüneyt; Department of Mechanical Engineering (2019)
Effects of flow development and surface roughness on the pressure drop characteristics of laminar liquid flowsinside microchannels are investigated numerically using OpenFOAM. Channels with square cross section of 500 μm×500 μmand length of 80 mm are studied. Top surface of the channels are artificially roughened using thespatial frequency methodto create 8 different roughness profiles. Scaling the relative roughness ({u1D700}) values of each profile to three different values (1.0, 2.5and5.0 %),a total of 2...
DESIGN AND MODELLING OF A HYBRID PRESSURE REGULATOR
Gürfidan, Mehmet Gökalp; Yazıcıoğlu, Yiğit; Department of Mechanical Engineering (2022-9-14)
Pressure regulator is used for regulating high upstream pressure to required low downstream pressure. It is especially an important component for space applications where an accurate pressure control is vital, and failure to do so can cause mission failure. In this thesis a novel pressure regulator design is modeled that eliminates the inherent steady state error of purely mechanical pressure regulator by introducing cascaded electromechanical actuator. Dynamic components of the proposed hybrid pressure reg...
