Investigation of sensory and instrumental methods to predict shelf-life of jelly gums
Tireki, Suzan; Şümnü, Servet Gülüm; Şahin, Serpil; Department of Food Engineering (2017)
The main aim of this study was to correlate sensorial changes with instrumental techniques to predict shelf life during storage of jelly gums. Effects of glucose syrup:sucrose ratio, starch and gelatine content on quality and sensorial properties of jellies were investigated. Glucose syrup: sucrose ratio, starch and gelatine contents affected hardness significantly. Moisture content, water activity, total soluble solids, pH, springiness and gumminess was influenced by only glucose syrup:sucrose ratio. Moist...
Investigation of waterhammer problems in the penstocks of small hydropower plants
Çalamak, Melih; Bozkuş, Zafer; Department of Civil Engineering (2010)
Waterhammer is an unsteady hydraulic problem which is commonly found in closed conduits of hydropower plants, water distribution networks and liquid pipeline systems. Due to either a malfunction of the system or inadequate operation conditions, pipeline may collapse or burst erratically resulting in substantial damages, and human losses in some cases. In this thesis, time dependent flow situations in the penstocks of small hydropower plants are investigated. A software, HAMMER, that utilizes method of chara...
Investigation of Waterhammer Problems in Water Wind Hybrid Systems

Investigation of Waterhammer Problems in Wind-Hydro Hybrid Power Plants
DİNÇER, Ali Ersin; Bozkuş, Zafer (Springer Science and Business Media LLC, 2016-12-01)
Sudden flow changes in confined pipe systems generate transient flow (waterhammer) conditions accompanied with very high or sometimes very low pressures traveling back and forth in the system. Depending on the magnitude of those pressures, pipe collapse or pipe bursting may take place at the weakest points of the system, resulting in costly damages as well as loss of human lives in some cases. In general, it may be encountered in the penstocks of hydropower plants, water transmission lines and water network...
Investigation of Self-Excited Ultrahigh Speed Induction Generators for Distributed Generation Systems
Jardan, Rafael K.; Varga, Zoltan; Nagy, Istvan (2011-09-10)
Application of ultra high speed induction generators (IG) in a system developed for utilization of renewable and waste energies that can be applied in Distributed Generation System is presented. The energy conversion is made by a turbine-generator set. For the electromechanical energy conversion application of special high speed induction generators has been studied and described in the paper. The design and analysis of the system are relied on computer simulation techniques verified by test results.
