The antimicrobial resistance of Salmonella and other foodborne pathogenic bacteria, witnessed in recent years, has become a significant health concern. Bacteria use chemical signals to communicate each other and regulate their behavior including virulence. Due to increasing antibiotic resistance, new drug development strategies are being investigated and the use of active ingredients of various medicinal and aromatic plants as alternatives to antibiotics is tested. This study aimed to determine the anti-quorum sensing (QS) activity of cinnamon oil (CO) on Chromobacterium violaceum and to evaluate antimicrobial activity of CO against multidrug-resistant (MDR) Salmonella enterica serotypes. Anti-QS activity was tested using biosensor strain and antibacterial activity was determined by a microdilution method according to EUCAST standards. CO was found effective on QS system of Chromobacterium violaceum. Nineteen foodborne pathogens isolated from different poultry/cow sourced foods and serotyped as Salmonella enterica subsp. Enterica serotype Infantis (15), Kentucky (1), Newport (1), Telaviv (1), and Typhimurium (1). Salmonella Infantis strains were found resistant to three or more antibiotic classes (with resistance to at least one antibiotic from each class) and categorized as MDR. The results concluded that CO has strong antibacterial activity against all Salmonella enterica serotypes with MIC between 0.125 mu g/ml and 1.0 mu g/ml. This research demonstrates that CO is a potential candidate for developing new antimicrobial agents, antiseptic solutions or natural food preservatives against MDR Salmonella serotypes while is also a potential anti-QS agent.

Salmonella is one of the most reported pathogens in foodborne outbreaks worldwide. In order to ensure safety of foods, farm-to-fork surveillance and control systems must be utilized. Development of numerous typing methods have improved the ability to detect salmonellosis outbreaks, enabling to trace the contaminated source from farm to fork. Facilitating prevention and regulation of techniques, knowledge of the epidemiology, genetics and ecology of Salmonella infections depend on the information provided by...
PHAGE THERAPY AGAINST CONTAMINATION OF PATHOGENIC ESCHERICHIA COLI STRAINS (O104:H4, O157:H7, AND O26) DURING GARDEN CRESS (LEPIDIUM SATIVUM LINN.) VEGETATION

The number of outbreaks caused by foodborne pathogens due to contaminated fresh produces has increased worldwide. Escherichia coli is one of the most causative foodborne pathogens. The major transmission way of foodborne pathogens to fresh produce is irrigation water. Once foodborne pathogens are transmitted, the elimination of pathogens from the fresh produce is harder. The most commonly used disinfected agents are chlorine-derived compounds for fresh produce. Yet, usage of them has been related to increas...
Antimicrobial aptamers for detection and inhibition of microbial pathogen growth

Discovery of alternative sources of antimicrobial agents are essential in the ongoing battle against microbial pathogens. Legislative and scientific challenges considerably hinder the discovery and use of new antimicrobial drugs, and new approaches are in urgent demand. On the other hand, rapid, specific and sensitive detection of airborne pathogens is becoming increasingly critical for public health. In this respect affinity oligonucleotides, aptamers, provide unique opportunities for the development of na...
Effect of controlled atmosphere storage modified atmosphere packaging and gaseous ozone treatment on the survival of Salmonella Enteritidis on cherry tomatoes
DAS, Elif; Gültekin, Güzin Candan; Bayındırlı, Alev (2006-08-01)
In recent years, outbreaks of infections associated with raw and minimally processed fruits and vegetables have been reported. The objective of this study was to analyse the growth/survival of Salmonella Enteritidis at spot-inoculated or stem-injected cherry tomatoes during passive modified atmosphere packaging (MAP), controlled atmosphere (CA) and to compare the results with those of air storage at 7 and 22 degrees C. During MAP, the gas composition equilibrated to 6% O-2/4% CO2. CO2 level was maintained a...
AN ALTERNATIVE WAY FOR REDUCTION OF SALMONELLA IN POULTRY PRODUCTS: BACTERIOPHAGES
Güzel, Mustafa; Soyer, Yeşim; Akçelik, Mustafa; Department of Biotechnology (2022-6-03)
Antibiotic resistance of pathogenic microorganisms is a severe public health problem. One of the main reasons of the resistance is the overuse of antibiotics in veterinary and food animals. Non-typhoidal Salmonella is a major foodborne pathogen that causes millions of cases each year, worldwide. Although Salmonella causes outbreaks in almost all food commodities, it is mostly associated with poultry. In addition to high prevalence in poultry, Salmonella isolates recovered from poultry have shown multi drug ...
