The main objective of this study was to investigate the potential use of microfluidization as a milling process for corn zein, and its effects on emulsifying properties of zein emulsions, and on rheological and textural properties of gluten-free bread formulations. Also, the effects of microfluidization were tried to improved with alkaline treatment. In the first part of the study, microstructural properties of zein slurries were evaluated by SEM analysis. In the second part of the study, rheological properties of zein emulsions and their stabilities were determined. Herschel-Bulkley model was found to explain the flow behaviors of zein emulsions. Also, emulsions were examined in terms of their viscoelastic properties, and the highest elastic (G') and viscous (G'') moduli values were obtained for emulsions containing 50% oil and 15% zein concentrations. The stability of the emulsions were measured, and emulsion containing 10% of zein concentration and 30% of oil concentration (10:30:60) gave the best result in terms of emulsion stability according to our study. Lastly, the rheological properties of different gluten-free dough formulations were investigated. For this purpose, the effects of microfluidized corn zein and different hydrocolloids at different pH values on the rheological properties of bread dough and the final quality parameters (texture, specific volume, color and storage) of gluten-free bread samples were measured. In dough rheology experiments, firstly, the linear viscoelastic region was determined as approximately a strain of lower than 0.3% for all formulations. Then, the viscoelastic behavior of dough in viscoelastic region was examined, and the highest moduli values were obtained from samples with hpmc, containing 80g starch content and treated by microfluidization. In the end, the effects of different formulations and storage time on staling were studied, and texture profile of the bread samples were measured. Volume of the bread samples were improved especially with the addition of hpmc and guar.

The effects of microfluidization on rheological and textural properties of gluten-free corn breads
OZTURK, Oguz Kaan; Mert, Behiç (2018-03-01)
This study presents the potential of microfluidization as a value adding process to corn gluten meal (CGM), which is often used as animal feed and is underutilized in food industry. In this study, we aimed to improve water holding ability of corn gluten and to investigate possibility of using this zein-rich byproduct as the main ingredient in gluten-free bread formulations. For this reason, microfluidization as a milling process for CGM, and its effects on rheological and textural properties of gluten-free ...
A new method to determine viscoelastic properties of corn grits during cooking and drying
Mert, Behiç; Campanella, Osvaldo H. (Elsevier BV, 2007-07-01)
The working principles and the theoretical background of a new method to measure the viscoelastic properties of grains during cooking and drying processes are presented. Specifically, corn grits at different processing stages of cooking and drying were chosen as the model grain and their viscoelastic characteristics, namely elastic stiffness and viscous damping, were determined. During the measurements grits were squeezed between a rigid bottom plate and a top round element oscillating at random frequencies...
The impact of UV-C irradiation on spoilage microorganisms and colour of orange juice
Taze, Bengi Hakguder; Unluturk, Sevcan; Buzrul, Sencer; Alpas, Hami (Springer Science and Business Media LLC, 2015-02-01)
The effect of UV-C irradiation on inactivation of spoilage microorganisms and colour of freshly squeezed orange juice were investigated. Orange juice samples were intentionally fermented in order to increase the natural microflora which were mostly composed of yeasts and then exposed to UV-C irradiation at an intensity level of 1.32 mW/cm(2) and sample depth of 0.153 cm for several exposure times by using a collimated beam apparatus. Applied UV dose was in the range of 0 and 108.42 mJ/cm(2). Resistance of y...
Development of nanofiber based active packaging material by electrospinning technique and food validation
Aydoğdu, Ayça; Şümnü, Servet Gülüm; Department of Food Engineering (2019)
The main objective of this study was to encapsulate gallic acid in Hydroxypropyl methylcellulose (HPMC) and legume flours (lentil and pea) based nanofiber by electrospinning and to examine the usage of nanofibers as active packaging materials. Firstly, HPMC based homogenous nanofibers were fabricated and it was observed that the morphology of the fibers changed from the beaded structure to the uniform fiber structure by increasing the concentrations of the solutions. By choosing optimum HPMC concentration, ...
The Effect of Hydrolysis on the Antioxidant Activity of Olive Mill Waste
Attard, Karen; Öztop, Halil Mecit; Lia, Frederick (2022-12-01)
This study presents the effect of hydrolysis on the antioxidant activity of olive mill waste. The olive pomace samples were collected at different stages of maturity and were investigated for their phenolic content and antioxidant activity. Three different extraction procedures were employed, including methanolic maceration extraction and two hydrolysed procedures using 6 M HCL for acid hydrolysis and 10 M NaOH for alkaline hydrolysis. The total phenolic, flavonoid and ortho-diphenolic content, metal ion re...
