The effect of inorganic salts (cosolute) on the main parameters of dilute aqueous poly(vinylpyrrolidone) (PVP) solutions, such as cloud points, phase diagram, theta temperature and viscosity was studied experimentally using various concentrations of salts and said polymer at varying temperatures. It is shown that, thermodynamic incompatibility of aqueous PVP-salts solutions strongly depends on the character of effect of salts (water-structure breakers or water-structure makers). Inclusion of salts into aqueous PVP solution leads to decreasing of the theta temperature and intrinsic viscosity which is caused by effect of the cosolute ions in enhancing the segment-segment interactions. Effect of Protein-Lipid-Salt Interactions on Sodium Availability in the Mouth and Consequent Perception of Saltiness: In Solutions
Yücel, Umut; Peterson, Devin G. (2015-09-02)
The influence of protein sodium interactions on the availability of sodium in the aqueous phase of liquid samples and consequently on the perception of saltiness was investigated. The aqueous effluents of casein and casein emulsion salt solutions were monitored for sodium availability from a tongue column system. In the aqueous protein salt solutions, increasing the protein/salt ratio from 1:1 to 5:1 or 10:1 significantly decreased the initial salt concentration in the effluent and resulted in a higher salt...
Effect of high hydrostatic pressure on lipid crystalline structures in palm stearin emulsions
Sevdin, Sezen; Alpas, Hami; Department of Food Engineering (2017)
Lipid crystal structures (polymorphs) are the determinant factors for sensorial, textural properties and the stability of the emulsions. Therefore, controlled crystallization gains importance during the production of foods such as margarine, confectionery, chocolate, etc. In literature, studies on the effect of high hydrostatic pressure (HHP) on lipid crystallization have contradictory results. To inspect the crystallization characteristics and response to the HHP treatment, palm stearinwater emulsions were...
Effect of Polymers on the Rheological Properties of KCl Polymer Type Drilling Fluid
Kök, Mustafa Verşan (2005-05-01)
In the course of this research, the effect of two polymers (xanthan gum and polyanionic cellulose) on the rheological properties of KCl/polymer type drilling fluids was investigated. Non-Newtonian drilling fluids are conventionally characterized by rheological models (Bingham Plastic, Power Law, Casson, Herchel-Bulkley and Robertson-Stiff). In this research, forty-five KCl/polymer data sets of varying compositions are prepared. Polymer addition to the system has affected the model and caused a variation of ...
Effects of different drying temperatures on the physical and mechanical properties of some marbles (Mugla, Turkey) during salt crystallization tests
YAVUZ, ALİ BAHADIR; Topal, Tamer (2016-06-01)
This study aims to understand the effects of drying temperatures during sodium sulphate salt crystallization tests on the physico-mechanical properties of some Mug. la marbles. Four commercially available and extensively used Turkish marbles, namely Mug. la white, Milas white, Derebag white and Milas Pearl, having different textural properties were subjected to sodium sulphate salt crystallization tests with 30, 60 and 100 degrees C drying temperatures. The change in the physico-mechanical properties of the...
EFFECTS OF SUBSTRATE CONCENTRATION ON GROWTH AND LACTIC-ACID PRODUCTION BY MIXED CULTURES OF LACTOBACILLUS-BULGARICUS AND STREPTOCOCCUS-THERMOPHILUS
OZEN, S; OZILGEN, M (Wiley, 1992-01-01)
The kinetics of growth and lactic acid production by mixed cultures of Lactobacillus bulgaricus and Streptococcus thermophilus were modeled with a set of modified logistic and Luedeking-Piret equations. The specific growth rates and the inhibitory effect of each individual species on the mixed culture growth were found to be determined by the media composition. The kinetic analysis clearly showed that the contribution of each microbial species to the mixed culture growth process changed drastically when the...
