Development of anthocyanins-based colorimetric film under visible light irradiation for the detection of food spoilage

Food spoilage causes serious problems including foodborne diseases, food waste, and, economic burdens. For this reason, research on ensuring food safety has been increasing in recent years. The most commonly followed approach is the integration of intelligent packaging technologies. Although colorimetric films are usually fabricated with heat treatment, some pigments and biomolecules can be sensitive to heat. Therefore, this study aimed to produce visible irradiated colorimetric films using grape anthocyanins and furfuryl-gelatin that can monitor the freshness of food products in real time. For this purpose, bovine gelatin was modified with furfuryl isocyanate to obtain visible-light sensitive f-gelatin. Moreover, anthocyanins were used both as a photosensitizer and a colorimetric freshness indicator. In that sense, the cross-linking density of the f-gelatin films was intended to enhance by inducing the photopolymerization reaction. The influence of the furfuryl group and the concentration of grape anthocyanins (1% and 2% w/v) on the mechanical, barrier, structural, thermal, and morphological properties of films were examined. Mechanical, thermal, and barrier properties of f-gelatin films were enhanced while a wavy cross-sectional morphology was obtained after the addition of grape anthocyanins. Further, the ammonia vapor sensitivity of F1A2 films was shown to be the best among the tested films. Therefore, food trials were conducted with F1A2. Color response and variations in △E and a* values of F1A2 films complied well with TVB-N release and microbial growth in chicken samples during 8 days of storage at 4oC. Consequently, the developed films could potentially be used for real-time monitoring of food spoilage.
