Role of ‘D-allulose’ in a starch based composite gel matrix

2020-01-15
Type of sugar and gelling agents used in confectionery formulations have vital importance since they directly influence physicochemical properties during storage. In this study, the effect of a non-caloric rare sugar, D-allulose (formerly called D-psicose) on the starch based confectionery gels were investigated in the presence and absence of soy protein isolate (SPI) using different experimental techniques for 28 days. For characterization of the formulized gel systems, common techniques were used (SEM, DSC, XRD, moisture content, water activity, hardness and color). Time Domain Nuclear Magnetic Resonance (TD-NMR) technique was also employed to explain dynamics in the systems. Sugar type was found to be a very significant factor affecting gel characteristics and retrogradation. Results showed that D-allulose containing formulations were less prone to retrogradation and showed smaller changes upon storage by supporting presence of better gel network. According to X-ray results, sucrose containing formulations were more susceptible to crystallization. T-2 relaxation spectra obtained from NMR experiments showed that number of distinct peaks reduced with the addition of SPI while relaxation times of peaks changed when different type of sugar.

Fabrication of gallic acid loaded Hydroxypropyl methylcellulose nanofibers by electrospinning technique as active packaging material
Aydogdu, Ayca; Şümnü, Servet Gülüm; Şahin, Serpil (Elsevier BV, 2019-03-15)
The objective of this study was to encapsulate gallic acid in Hydroxypropyl methylcellulose (HPMC)/poly-ethylene oxide (PEO) blend nanofiber by using electrospinning and examine the usage of nanofibers as active packaging materials. Gallic acid loaded nanofibers showed homogenous morphology. Gallic acid was loaded into nanofibers efficiently and nanofibers showed strong antioxidant activity. As the gallic acid amount increased, the TGA curves had shifted one stage to two stage degradation and degradation te...
Stereoregularity of fractionally crystallized poly(propylene oxide) samples by 13C-NMR spectroscopy
Alyürük, K.; Alyürük, Kemal (Wiley, 1989-4)
Several stereoregular poly(propylene oxide) (PPO) samples were synthesized employing either trimethyl aluminum hydrolyzates or Pruitt–Baggett type catalysts. Dilute isooctane solutions of these samples were fractionally crystallized by stepwise cooling from 333 K down to 273 K. The fractions which dissolve at 273 K were noncrystallizable and were further fractionated by GFC. The isolated fractions were characterized by 13C‐NMR, DSC, and viscometry techniques. Both structural (head‐to‐head and tail‐to‐tail l...

In this study, two new benzotriazole (BTz) and dithienothiophene (DTT) containing conjugated polymers were synthesized. After successful characterizations of the monomers by proton-nuclear magnetic resonance (1H NMR) and carbon-NMR (13C NMR) techniques, poly(4-(dithieno[3, 2-b:2,3-d]thiophen-2-yl)-2-(2-octyldodecyl)-2H-benzo[d][1,2,3] triazole) P1 and poly(4-(5-(dithieno[3,2-b:2,3-d]thiophen-2-yl)thiophen-2-yl)-2-(2-octyldodecyl)-7-(thiophen-2-yl)-2H-benzo[d][1,2,3]triazole) P2 were synthesized via a typica...
A new donor-acceptor type polymeric material from a thiophene derivative and its electrochromic properties
Udum, Yasemin Arslan; Yildiz, Ersin; Günbaş, Emrullah Görkem; Toppare, Levent Kamil (Wiley, 2008-06-01)
A new electrochromic polymer, poly(2,3,5,8-tetra(thiophen-2-yl)quinoxaline) (PTTQ), was synthesized electrochemically and its electrochromic properties were investigated. The polymer was characterized by Cyclic Voltammetry, Fourier Transform infrared spectroscopy, LTV-Vis-NIR Spectroscopy, and colorimetry. Spectroelectrochemistry analysis demonstrated that the polymer can undergo both p- and true n-type doping processes. The polymer, (PTTQ), has three accessible color states: an oxidized transmissive, a neu...
